Usha Vance Celebrates Cinco de Mayo, Shares Recipe for Famous Aloo Gobi Chalupas

WASHINGTON — First Lady Usha Vance shared a fusion recipe on social media Tuesday in recognition of Cinco de Mayo, combining elements of Indian and Mexican cuisines in a dish she described as “aloo gobi chalupas.”

In a post published on her official account, Vance explained that the recipe pairs the traditional North Indian vegetable preparation of aloo gobi — a spiced mixture of potatoes and cauliflower — with chalupas, a fried masa base commonly associated with Mexican cuisine. The post included step-by-step instructions and photos of the finished dish.

“Food is one of the simplest ways to celebrate the diversity of traditions that shape American life,” Vance wrote. “This recipe brings together everything I love about America.”

Cinco de Mayo, observed annually on May 5, commemorates Mexico’s 1862 victory over French forces at the Battle of Puebla. In the United States, the date has evolved into a broader celebration of Mexican culture, often marked by festivals, food, and community events.

The recipe itself calls for roasting cauliflower and potatoes with turmeric, cumin, and garam masala before placing the mixture onto crisped masa shells, then topping it with cilantro, yogurt-based sauce, and pickled onions.

This is not the first time Vance has shared recipes publicly. In previous posts, she has highlighted dishes inspired by her family background as well as meals connected to national holidays and events.
